whose-its & whats-its

Lately I have been.........

......thinking about how I should be eating more healthy and exercising more.

......catching up on "Hell's Kitchen" on hulu.com.

......learning a lot about germs and microbiology.

......checking everyday to see if the nursing application has opened.

......wondering how we are going to get by on one really low-income and no health insurance.

......frustrated about where to store our camping gear and memory books in our tiny apartment.

......spending a lot of money on organizational supplies and equipment to store stuff in our tiny apartment.

......wanting to get a full makeover, thinking about changing the hair and starting to wear make-up.

......wishing that I could backpack Europe or South America for a few months.

......hoping that I will be able to see baby Jones when he is still a baby.

......wanting to spend more time sewing and being crafty.

Applesauce Cookies


2 eggs
1/2 cup shortening or margarine
1 cup sugar
1 cup applesauce
1 tsp baking soda
1 cup flour
1/2 tsp of all of the following: cloves, nutmeg, cinnamon, salt

1. Combine eggs, shortening, and sugar.
2. In small bowl or cup, add baking soda to applesauce (mix well), then add to egg mixture.
3. In small bowl combine flour, spices, and salt, then add to egg/applesauce mixture.

Bake at 350 degrees from 15 - 20 minutes. Yield: almost 3 dozen.
