Tomorrow we are going to Mike and Kristina's to celebrate Mother's Day. I was assigned to bring a side dish. I always have a hard time with this one, it's such a broad category, it could be anything from rolls to a salad. I finally settled on humus.
Lime-cilantro hummus
1-2 garlic cloves
1 scallion
handful cilantro leaves
1 can garbanzo beans
3 tbsp tahini (I have no idea what this is, so I don't put it in)
juice of 1 lime
1/2 tsp cumin
1-2 tbsp olive oil
1. In small food processor combine garlic, cilantro, and scallion.
2. Then add rest of ingredients (except olive oil) and mix.
3. Add olive oil until desired thickness is achieved.
**I like to serve with pita bread.
