HEALTHY COOKIES!!! (per Meg's request, Hi Meg!.....hope you all enjoy)
1. Combine:
3 large bananas (mashed)
1 tsp vanilla
1/4 cup coconut Oil (warmed - coconut oil comes in solid form, you have to melt it on the stove, be careful not to burn or get it too hot)
2. In a separate larger bowl combine:
2 cups rolled oats (I like to use instant)
2/3 cup almond meal
1/3 cup coconut
1/2 tsp cinnamon
1/2 tsp fine grain sea salt (I usually use regular salt)
1 tsp baking powder
6 - 7 oz chopped chocolate bar into chunks (chocolate chips work just fine, can use semi-sweet, milk, or mint-choc, my favorite is mint)
3. Fold banana mixture in to dry mixture.
4. Bake at 350 placing tray on rack 1/3 from the roof of oven for 12 - 14 minutes (sometimes a little longer, use your own judgment).
****I have added pumpkin seed and flax seed for a little extra health. I also think it might be nice to add craisins, raisins, or puffed rice.
****The ingredients are kind of expensive, but are a good investment if you make these often.
****Make sure you refrigerate leftovers.

THANKS!!! Hugh is going to be sooo happy! Sorry it took me so long to respond. Hope you two are doing well! I will let you know if they turn out for me.(I struggle at times :)
Awesome! I will have to try this. Have you found certified GF instant oats?
